- 1 medium lotus root (about 8 oz), peeled and thinly sliced
- 1 tbsp sesame oil or vegetable oil
- 2 garlic cloves, minced
- 1-inch piece of ginger, finely chopped or julienned
- 1 small red chili, sliced (optional, for heat)

- 2 tbsp soy sauce or tamari (for gluten-free)
- 1 tbsp rice vinegar
- 1 tsp sugar (optional)
- 1 tsp toasted sesame seeds (for garnish)
- 2 green onions, sliced (for garnish)
Instructions:
Step 1: Prepare the Lotus Root
- Peel the lotus root with a vegetable peeler. Slice it thinly into rounds, about ⅛ inch thick.
- Rinse the slices in cold water and soak them in a bowl of water with a splash of vinegar for 10 minutes to prevent discoloration. Drain and pat dry.
Step 2: Stir-Fry the Aromatics
- Heat sesame oil in a large skillet or wok over medium heat.
- Add garlic, ginger, and chili (if using). Stir-fry for 30 seconds until fragrant.
Step 3: Cook the Lotus Root
- Add the lotus root slices to the skillet and stir-fry for 3–4 minutes, until lightly browned and tender but still crisp.
- Add the snow peas (if using) and stir-fry for another 2 minutes.
Step 4: Add the Sauce
- In a small bowl, mix soy sauce, rice vinegar, and sugar (if using). Pour over the stir-fry and toss to coat evenly.
- Cook for 1–2 minutes, allowing the sauce to thicken slightly.
Step 5: Serve and Garnish
- Transfer the stir-fry to a serving dish. Garnish with toasted sesame seeds and sliced green onions.
- Serve warm with steamed rice or as a side dish.
Tips & Variations:
- Add mushrooms: Include shiitake or wood ear mushrooms for added umami.
- Customize veggies: Toss in bell peppers, carrots, or bok choy for extra color and nutrition.
